      Happy New Year! We hope you had a wonderful Christmas and rang in the New Year with a glass of your favourite Wolf Blass wine.

      Before we head into vintage we’re enjoying the spoils of the season – delicious summer seafood and our selection of mouthwatering whites to serve it with. We bring you a light and tasty Prawn Spaghetti recipe, and our tips for pairing wine with seafood.

      We also look at how we can still enjoy our favourite reds through the heat of the summer - it all comes down to temperature.

      Keep Your Cool with Summer Reds
      With Australia Day on the horizon, it’s all about barbecues, picnics and alfresco dining. But we still like to enjoy a glass of our favourite red. To get the most of your red wines, even through the summer heat, serve them between 14℃ for lighter reds and up to 18℃ for more full-bodied styles. Too warm and the alcohol will be overly dominant. At the right temperature your wine will be in perfect balance. Pop them in the fridge or esky for half an hour or so before serving to take the edge off and enjoy your wine no matter how hot it might be.

      Matching Wine with Seafood
      When it comes to matching wine with seafood the key consideration is not to overwhelm the delicate flesh with a big hearty wine. But that’s not to say that only crisp, fresh whites will do the trick. There are a few other options that will work just as well.
      Spaghetti with Prawns, Fresh Tomato, Chilli and Feta
      A quick, light seafood dish for the summer months.
