Welcome to the December edition of The View.

The festive season is upon us so what better time to take a look back at 2012 and what we have achieved. So far this year Wolf Blass has won 14 Trophies, 47 Gold Medals, 86 Silver Medals and 174 Bronze Medals.

We have teamed up with Saskia Beer from Barossa Farm Produce to bring you a delicious Turkey Ballotine with Prosciutto Sage Stuffing recipe, perfect for Christmas day celebrations with friends and family.

As we approach the festive season, Wolf Blass is raising a toast to a year of wins across its luxury wine portfolio.

In October, the Association of Australian Boutique Winemakers awarded the iconic 2007 Wolf Blass Black Label the trophy winner in its category at the prestigious Five Nations Wine Challenge.

Less than a month later, Black Label 2008 was ranked equal 2nd amongst 30 of the world’s leading Cabernet Sauvignon blends at the inaugural Master Blend Classification (MBC). The MBC events were held in Melbourne, Toronto and London with Black Label 2008 receiving an average score of 91/100 across the 3 events – ahead of First Growth Bordeaux wines.

1 x Saskia Beer's Barossa Farm Produce Turkey Ballotine with Prosciutto & Sage Stuffing

500ml Saskia Beer chicken stock

Wolf Blass Gold Label Shiraz, Pickled Quinces and Onion and Leek sauce, for serving

Oil the turkey and season well with salt & pepper. Brush a little of the juice from the pickled quinces over to give a burnished appearance to the roll.

Pour the chicken stock into a large baking tray. This provides moisture and will create a jus.

Roast in a preheated 170 degree oven until the internal temperature is around 56-58 degrees. Baste every 10 minutes or so after the first 30 minutes cooking to keep the bird moist. A 3-4 kg Ballotine will take about 90 minutes.

When the turkey has reached 56-58 degrees, remove it from the oven and rest breast side down for at least 60 minutes, or up to equal the cooking time. Cover with a tea towel or loose foil – the residual heat will finish the cooking process.

The remaining juices in the roasting dish will form the basis of your sauce. Taste for seasoning – if the juices are highly seasoned then do not reduce them too much, but rather thicken them with a little flour and butter. If they are not too salty then you can thicken them using a normal reduction technique.

Finely slice the pickled quinces. Carve the turkey and serve the stuffing under the meat. Garnish with pickled quinces and plucked parsley, sage and thyme.
