I dragged out a bottle that I have had tucked away for 5 years at least, time to pull the cork.

Yes start the year of with a bang; well the pop of a cork will have to do and pop I did.

I pulled out the Champagne, not just any old Champagne, my last bottle of Taittinger Rose NV.

A wine that I have been holding for a special occasion and 2013 will be a very special year for me...well that is the plan!

NV Champagne will benefit from a little bottle age and this has come up trumps.

Bright salmon pink gives you a clue (Drink me with a smoked salmon dish)
In the mouth: softer than I remember, still showing good fruit very aromatic strawberries jump out from the glass.
There is a little earthiness there as well, the crisp acid has softened over the years.

The bubbles are supper small and streaming up the side of the glass to form a long crisp finish.
Elegant is the word best used to describe this wine!

Conclusion: This wine is all class!!!
Champagne and sparkling Rose can be a little sharp if you are not used to this style.
I have also found the cheaper sparkling Rose wines are very acid and can be a bit of a shock at first and best left alone.
